Goat meat cooked in the wood oven with potatoes and artichokes
What we need :
2 kilos of fresh goat meat .
2 kilos of fresh potatoes.
1 kilo of fresh or frozen artichokes.
2 tea cup of virgin Cretan olive oil.
1 tea cup of fresh squeezed orange juice .
1 tea cup of fresh squeezed lemon juice.
3 tea cups of water.
1 shot of coniac.
1 fresh tomatoe.
2/3 garlic cloves .
Salt, black pepper, dry oregano, fresh oregano, cinnamon and fresh thyme.
( for 6 to 8 persons )
What we do :
We wash and dry the meat.
We peel of the potatoes, the artichokes and spread them in a big pan .
We add the olive oil, the orange and lemon juice and we scrape the fresh tomatoe.
We are adding sea salt (soup spoon), pepper (tea spoon ), cinnamon (tea spoon)
dry oregano (soup spoon), fresh thyme and fresh oregano.
Garlic, 2 tea cups of olive oil and one shot of coniac on the top .
We covered our pan with aluminium foil and cooked in the oven for approximately 2 hours at 200 c° (uncover after an hour and add warm water).
Our food is ready when it starts to get a cool brown colour .
During the Easter period this food is very famous and popular to all the Cretan families. For most of the times, it accompanies our Easter table.
